MCT Oil Fudge Brownies





I am making this article very easy to write, I am just cutting and pasting from the FOD Family Support group page on Facebook. I have been outside in the hot sun all day at work and I just wanted to do something inside and since I love baking and spending time in my lovely kitchen, thats what I did tonight.
I have through a fellow FOD (parent) in Denmark, Fie (Flo' Diner) found a fat reduced coco  (11%)that  I like that I have used in this cake.

MCT Oil Fudge Brownies

1 cup cocoa, unsweetened
1/2 tsp baking soda
1 cup MCT oil, divided
1/2 cup boiling water
2 cups sugar
2 eggs, lightly beaten (I have only used the eggwhites from 4 eggs)
1 1/3 cups all-purpose flour
1 tsp vanilla
1/4 tsp salt

Lightly beat eggs, set aside. Combine cocoa and baking soda in a mixing bowl; blend in half of the oil. Add boiling water and stir until thickened. Stir in sugar, eggs, and remaining oil; stir until batter is smooth. Stir in flour, vanilla, and salt, stirring until well blended.




Pour into a greased 13x9x2-inch baking pan. Bake at 350˚ for 25 minutes. Cool in pan on rack.


Yield:
16 3inx2in brownies: each brownie contains ~1 Tablespoon MCT oil.
OR
32 1.5inx2in brownies: each brownie contains ~1/2 Tablespoon MCT oil.

How to get the mail out in the Summer time!

I got a good laugh the other day looking out of my window. Here is the mean of transportation the Summer postman (boy) gets around in. I guess that a lot of the teenagers that delivers the mail in the Summer time are under 18 and don't have their license yet.
 I kind of like this little quirky little motor scooter.

A happy birthday and house warming card

My good friend Linda bought a new "old" house a month ago and we have been painting and laying floors for the last few weeks to get the house in the colours she wants. She also turned 37 this weekend, so I thought I would give her a birthday and housewarming present in one. With the house she also got a big garden with a lot of lawn, flowers, threes and a lot of bushes. She got a lot of equipment to make her garden beautiful. With presents there has to be a card and since I am in to scrapping and card makeing I had to make a card. Linda is the one who introduced me to scrapping and she is like 100 times better at it than I am, so the card had to be special.
I follow several bloggs about scrapping and  found this amazing card looking like a suitcase at "Annes paper fun" , she makes the most amazing creations. She is lucky to have Tim Holtz suitcase dices for a sizzix machine which I don't, but I printed out her photos and drew myself some templates and cut it out by hand. It was a hell of a job, but I am quite satisfied, especially since I hate meticulous jobs like that.


To select colours for the project I usually start with finding a head piece,in this case the label with home sweet home. Then I could figure out the colour scheme of the project, I must admit that my favorite colours are turquoise and brown.




The heart is from a necklace I bought on sale and dismantled.


I love using page from used books with different fonts, this piece of paper actually have a norwegian text, but usually I buy second hand books and I go to fleemarkeds and buy books in different languages.
I also like the motto "carpe diem", seize the day!


Here I have used the bottle cap of a champagne bottle.

I am in cookware heaven!! Party, Party, Party!!

Last Winter I remodeled my kithcen and I had to throw out all my pots and frying pans exept a wok and two iron pans as I installed a new stove with a induction top. The sad ting about that was that I had to get rid of my beloved pans from Høyang Polaris, the Party collection. They are really expensive and I could not afford to buy all new ones all at once, so I have been on a lookout for a sale and today I finally found one. I was going to buy one pan on a half price sale, and was really happy about that, but guess what!. After picking the box down from the shelf I stumbled over another bargain, 3 pans in different sizes on a 40% sale.  I payed NOK 1000,- and saved about NOK 1500,-. Now I can wish for something exiting for my birthday instead of money for pots and pans.


I love the black designe.

The reason I love and swear to this collection is the reinforced non-stick coating that is essential in fat free cooking. The party collection is also functional and the designe is nice. The quality of the pans are very high as well.





And look how nicly they stack and they take almost any space at all.......

With the lid in glas you can easily watch the cooking prosses of you dish.

Tapas Tapas

Once in a while some of the girls at work meet up after work for a beer or two. Last week we desided to try out a new Tapas Restaurant, "Tapas Tapas". We were seven  women who met up after work and we all tried a combo of five dishes:
  • Albondigas, meatballs of lam with a spicy tomato saus
  • STT wrap, tortilla with sundried tomatoes and basil (kind of creamy)
  • Gambas con salsa herbario, scampi with a salsa with herbs
  • Chorizo, a spicy Spanish sausage
  • Patatas
served with foccacia and aioli.

I loved all the dishes, most of them was spicy just as I like them. I was a little disapointed of the scampi since it was kind of tasteless, but the tomato saus served with the meatballs was just amazing.
I must admitt that this kind of oily (olive) food is a big no no for me, but once in a while I really need to give my self a treat. I do comit and keep to a really low fat diet in my everyday life.


Tapas,Tapas also have large collection of wine as well, but I was the designated driver that night so I just had apple cider, non alcoholic. I will sertainly go back and try out some of the other dishes and a glas or two of wine. I am going  back to have a glas of cava, thats for  sure. 





Above is two of my favorites, albondigas (meatballs) and patatas (cooked with a lot of sea salt).

This is the most creativ way I have ever been served a "coconut bun" before ( I have no idea what a Coconut bun is called in English). My good colleauge Jonna bought the Panacotta with vanilla ( a lot of vanilla) a much more tapas like desert

I would definitly recomend this restaurant that is located in Lørenskoghus in Lørenskog. You can always call ahead for take away. I aslo find the prices very reasonable compared too other Tapas restaurants in Oslo.

Trashy Blonde!

I am not sure if you have to be a trashy blonde to drink this beer, but I loved the label and the name. My best friend Linda told me the other day that she had bought me a beer, then she put this bottle in front of me on the table. We got a good laught out of it since I am as far from a trashy blonde that you can come. We did not taste it on a this nice Sunday afternoon as I had to drive back home, so I can not tell you if it taste good or not, but the label still rock.






A cute little basket with flowers

I work at a day care center and today we had a "Summer Party" with BBQ. Four of our oldest children are starting school this fall and today we made our goodbyes and farewells. All the four children got a album with photos of them self during their time with us and drawings and other artistic creations they have made.
There is also a tradition that the parents of these children buys a little gift to us "adults" and today I want to share the cute little basket with flowers we got.

Thanks to our wonderful four children that are leaving us this Summer, We will miss you guys a lot.

Not only homemade food, but also homemade recipe books.


I have for as long as I can remember collected recipes, when I started on my life changing diet a couple of years ago I had to start all over. Last fall I made a resolution to organize all my recipes. I desided that I would make two recipe books, one with the recipes that I want to try and one with the ones I have tried and liked.


  I can't see the point in collecting recipes I don'  much care for. Along the way I make little notes on the recipes of adjustments and modifications that I make. I made the front cover of one of three recipes books last fall and I have been working for the second one for months now, but I have lacked the inspiration to finish it. A couple of nights ago I finished the second one and made the third one that will contain recipes from Flo's Diner. And here are the results, I am pretty pleased.






Before I am satisfied with this project I will have sorted the pages in different categories and scrapped separators.
